Quality and provenance are of the utmost importance to us and we source locally bred and reared meat from traditional breeds wherever possible.

Thomas J Fudge

Leigh Food Fair - Thomas J Fudge In 1916, our great-great-uncle, Thomas J Fudge, a dapper chap with a distinctive moustache, opened a bakery. A rather remarkable bakery in beautiful, bountiful Dorset. His buns were buttery. His bread was brilliant. His biscuits were the business. He was the one who taught our great-great-grandfather, Percy, his trade.

And over 90 years later, we – his family tree – are continuing his remarkable, edible work.

Somerset Cider Brandy Company

Leigh Food Fair - Somerset Cider Brandy Company It has long been recognised that for growing apples for fermenting, England has three “vintage” areas where the soil conditions and climate are deemed best for growing cider apples, known as "terroir"; all of these areas are in Somerset.

Apples are the starting point for both our cider and our Somerset Cider Brandy and at Burrow Hill, we believe it is vital to know their origins. All the apples we ferment come from Somerset, the majority from our own orchards but also from small local growers. We grow more than 40 varieties of vintage cider apples with names such as Brown Snout, Stoke Red, Harry Masters and the legendary Kingston Black.

Yarty Cordials

Leigh Food Fair - Yarty Cordials We hand-make our cordials using old family recipes and some new ones that we have created ourselves.

Jayne has been making cordials for many years for family and friends, using old family recipes, from Jayne’s grandmother Mabel who used cordials to cook (this was long before fridges, and a cordial was one of the only ways to preserve the fruit).

We are forever changing our cordial flavours to match the season and fruit availability.

Our lamb is hung for 1 week and our beef a minimum of three weeks to enhance its quality and flavour, then professionally prepared into selected joints and cuts by a master butcher. It is then vacuum packed and labeled.

Our family has farmed sheep here using traditional methods for generations. We take great pride and care in our animals and their welfare is of the utmost importance. All our sheep and beef are reared naturally, grazing on prime Dorset meadowland and they live on a chemical free diet.

Forager Spirit

Leigh Food Fair - Forager Spirit Forager Spirit handcrafts very small batch infused spirits, liqueurs, premixed cocktails and cordials. Our flavours are derived from a number of foraged and locally or ethically sourced ingredients including wild fruits, herbs, leaves and spices chosen for their flavour but also their active compounds that may work as a digestif, an aperitif or to simply lift the spirits.

The infusions are created through the collaborative work of herbal technicians, foragers, mixologists and the inspiration of 13th century monks among others to create truly original, deeply sensuous and deliciously affecting libations.
